  • 1 Frying bath
  • 1 Thyme sprig
  • 1 pinch Espelette pepper
  • 1 tsp. coffee Olive oil
  • 1 tsp. coffee Olive oil
  • 1 shallot
  • 1 clove Garlic
  • 1 pinch Espelette pepper
  • 100 g breadcrumbs
  • 120 g Flour
  • 150 g Ham
  • 25 cl Vegetables soup
  • 4 piquillos
  • 80 g Grated cheese


  1. Prepare the sauce. Mix the ingredients and reserve
  2. Peel and chop the shallot. Brown with 1 tbsp. of oil in a saucepan. Add the chopped ham, 60 g flour and mix. Pour the hot vegetable broth and stir for 5 minutes over low heat; the paste should thicken and peel off the walls easily. Stir in grated cheese and chili
  3. Form 20 croquettes. Roll them in the remaining flour, beaten egg and bread crumbs. Make them brown in sets of 4 in the frying bath about 3 minutes. Drain on paper towels
  4. Sprinkle with thyme and serve immediately with the sauce.
