Ingredients
- 1 Frying bath
- 1 Thyme sprig
- 1 pinch Espelette pepper
- 1 tsp. coffee Olive oil
- 1 tsp. coffee Olive oil
- 1 shallot
- 1 clove Garlic
- 1 pinch Espelette pepper
- 100 g breadcrumbs
- 120 g Flour
- 150 g Ham
- 25 cl Vegetables soup
- 4 piquillos
- 80 g Grated cheese
Instructions
- Prepare the sauce. Mix the ingredients and reserve
- Peel and chop the shallot. Brown with 1 tbsp. of oil in a saucepan. Add the chopped ham, 60 g flour and mix. Pour the hot vegetable broth and stir for 5 minutes over low heat; the paste should thicken and peel off the walls easily. Stir in grated cheese and chili
- Form 20 croquettes. Roll them in the remaining flour, beaten egg and bread crumbs. Make them brown in sets of 4 in the frying bath about 3 minutes. Drain on paper towels
- Sprinkle with thyme and serve immediately with the sauce.
