  • 20 cl Liquid cream
  • 75 g Butter
  • 75 g Crushed hazelnuts
  • 2 plucked Fine salt
  • 0,5 bag Yeast


  1. Preheat the oven
  2. (180 ° C). Cut the butter into small pieces and let them soften at room temperature. Crush the hazelnuts, without reducing them to powder. Wash, wring and chop the sprigs of chives
  3. Whisk together the softened butter, eggs, crushed hazelnuts, chives and crème fraîche. Then add the flour, yeast and salt. Continue whisking to obtain a smooth dough
  4. Cut the goat's log into 1 cm thick slices. Pour the dough into a buttered and floured non-stick pan and gently slide the goat slices vertically into the dough. Bake for 40 minutes, checking the coloring of the cake. Turn out and let cool on a rack
  5. Wash, wring and chop chives. Prepare the coulis by mixing liquid cream, chopped chives, nutmeg and salt
  6. Serve warm or cold cake with chive sauce.
