  • 1 tsp. coffee Mixed peppercorns
  • 1 tsp. coffee Espelette pepper
  • 1 tsp. soup Cristalized sugar
  • 1 Pink grapefruit
  • 10 cl Campari
  • 10 cl Vodka
  • 150 g Foie Gras Semi-Preserved
  • 2 tsp. soup Cane sugar syrup
  • 2 raspberries
  • 4 Ice cubes


  1. Cut the foie gras into bite-sized pieces. Drop each piece on a square of stretch film. Gather the 4 corners and tighten to form small bundles. Reserve in the fridge
  2. Crush the peppercorns. Remove the stretch film from the foie gras candies. Sprinkle pepper on one half and pepper on the other. Refrigerate until ready to serve
  3. Squeeze the grapefruit. Pour the sugar on a plate. Moisten the edges of the glasses and put them in the sugar. Put the ice cubes in the glasses, pour the grapefruit juice, the sugar syrup, the Campari and the vodka. Decorate with a raspberry stuck on a spade and serve immediately with the foie gras candies.
